Mining and Stone-cutting (or Stone-masonry) are undertaken by two different, distinct professions.
A Miners task is essentially carried out under-ground, though in some instances a miner may have a role mining at the surface (some gold mining). Mining is a task where it generally pays to have an educated population. Educated Miners are better at spotting and assaying ore carrying rock than their uneducated counterparts, thus they will generally return a greater yield per work cycle.
Whereas a miner spends most of their time below ground; a Stonecutter will generally be employed in an open-air Quarry. Stonecutting is another task where it pays to have an educated population. Being Educated, a Stonecutter is more accurate, less wasteful and better at extracting stone, thus they will generally return a greater yield per work cycle than their uneducated counterparts.
